Ingredients
For 6 to 8 people
-1 sweet shortcrust pastry
For garnish
-3 yellow peaches
-2 white peaches
-40 g brown sugar
-2 tablespoons of Maizena
the juice of 1⁄2 lime
-5 sprigs of thyme
-1 pinch of salt
-40g ground almonds
-1 egg yolk
-Brown sugar
Preparation
Wash the peaches, pit them and cut them into quarters. In a bowl, combine the peaches, sugar, Maïzena®, lime juice, thyme leaves and salt. Leave to macerate for 15 minutes. Preheat the oven to 180°C. Roll out the dough on a sheet of parchment paper. Sprinkle it with ground almonds, leaving a 4 cm edge. Arrange peach mixture. Fold the edges of the dough over the peaches. Slide the paper with the pie onto a baking sheet. Beat the egg yolk, brush the edge of the pie with a pastry brush and sprinkle with brown sugar. bake for 30 minutes. Enjoy hot or cold.
